Abundance Of Olives

Olives

Some of our Stage 1 students have been learning the art of curing olives. Our olive tree has been plentiful this year and we are trying several curing recipes. The process is lengthy and the students have been working through the steps to cure the olives ready for tasting. They were excited when Mrs Pawley (an olive lover) gave them the ‘thumbs up’ on their final product.

The steps include:

  1. Crush the olives to remove the pip. Then place the olives into cold water with slices of lemon.
  2. Leave them to soak 24 hours and then drain the olives and place in a shallow dish. Sprinkle with rock salt and leave for 24 hours.
  3. Sprinkle with enough vinegar to cover and stand for another 24 hours.
  4. Drain the olives and put into a bowl, add olive oil and herbs of your choice. We have used oregano and garlic.
  5. Mix well and put into jars with olive oil and seal. The olives will mature in the oil and soften with time.
